The way I’ve phrased it in the past is ‘I think you may be suited to a more flexible singing teacher’ but yes he owes you money x

ask them what their concerns are, I hardly get deposits now the booking system does the trick as they can say yes or no to attendance and they get the text message the day before that they can reply to so at least you know the day before they won’t be coming

yep they do pay it, sometimes though its more time/hassel than it’s worth there are signs that people are nervous or messing about if you spot them straight away its easier
